I suppose you could stuff a potato with just about anything, but I’m loving the idea of an egg-stuffed baked potato! This would be yummy for breakfast, lunch, or dinner. It can be used as a side, or an entire meal wrapped up all in one. After baking, use a spoon to take out the insides of the potato, brush the inside with a little melted butter, stuff it with cheese, bacon, eggs and seasoning, and then bake for an additional 15-20 minutes.
