Ingredients
1poundbreakfast sausage
2cupsdry pancake mix
1½cupswater
1cupshredded cheddar cheese
¼cupmaple syrup (plus more for dipping)
Instructions
Preheat oven to 400° F and grease or line a mini muffin pan.
Brown and chop the sausage until no longer pink. Remove from the pan and place on a paper towel lined plate to soak up some of the grease.
In a large bowl, combine the pancake mix, water, and maple syrup. Do NOT over mix! It's ok if the batter is a little clumpy.
Fold in the cooked sausage and cheddar cheese.
Spoon the batter into your prepared pan and bake for 12-15 minutes, or until muffins are golden brown and a toothpick comes out clean.
Enjoy with more maple syrup for dipping!
Notes
Store any leftovers in the fridge for up to 5 days. Reheat in the microwave for just a few seconds and they are just as good as the day you baked them!
Freeze for later. Once fully cooled, store them in a freezer bag for up to 3 months. When ready to eat, thaw them out the night before and simply reheat in a toaster oven or microwave.
