Mini Cheesy Pancake Sausage Muffins
You heard that right! Muffins made with the most delicious sweet and savory mixture of everyone favorite breakfast ingredients. Why not bake it all up into a fun handheld breakfast your kids will love? This easy breakfast idea is an exciting idea for a simple family brunch, your next slumber party, holidays, or even a make-ahead breakfast that will last you all week on busy mornings.

Ingredients Needed
- 1 pound breakfast sausage
- 2 cups dry pancake mix (like Hungry Jack)
- 1 ½ cups water
- 1 cup shredded cheddar cheese
- ¼ cup maple syrup (plus more for dipping)

Step 1This yummy comfort food breakfast couldn’t be easier to make! Simply brown the sausage and drain or blot off any excess grease. We like the Jimmy Dean regular sausage, but you could also try the spicy or sage flavored.
Step 2In a large bowl, combine the pancake mix, water, and maple syrup. Don’t over mix! Fold in the cooked sausage and cheddar cheese to the batter.
Step 3Once you’ve got everything mixed well, spoon the sweet and savory batter into a lined or greased mini muffin pan, and they’re ready to bake!
Step 4Bake in a 400° F oven for 12-15 minutes, or until golden brown and cooked through. Serve with syrup for dipping and you’ve got yourself an instant hit for breakfast!
Breakfast just got a whole lot more fun!
These little copycat McGriddle Bites prove that good things really do come in small packages. They’re sweet, savory, cheesy, and seriously hard to stop eating. Serve them warm with a little extra maple syrup for dipping, and don’t be surprised when your picky eaters start fighting over the last one. We love pairing them with a side of fresh fruit for a little added nutrition and a perfectly balanced breakfast.
McGriddle Bites (Mini Sausage Pancake Muffins)
Ingredients
- 1 pound breakfast sausage
- 2 cups dry pancake mix
- 1½ cups water
- 1 cup shredded cheddar cheese
- ¼ cup maple syrup (plus more for dipping)
Instructions
- Preheat oven to 400° F and grease or line a mini muffin pan.
- Brown and chop the sausage until no longer pink. Remove from the pan and place on a paper towel lined plate to soak up some of the grease.
- In a large bowl, combine the pancake mix, water, and maple syrup. Do NOT over mix! It's ok if the batter is a little clumpy.
- Fold in the cooked sausage and cheddar cheese.
- Spoon the batter into your prepared pan and bake for 12-15 minutes, or until muffins are golden brown and a toothpick comes out clean.
- Enjoy with more maple syrup for dipping!
Notes
- Store any leftovers in the fridge for up to 5 days. Reheat in the microwave for just a few seconds and they are just as good as the day you baked them!
- Freeze for later. Once fully cooled, store them in a freezer bag for up to 3 months. When ready to eat, thaw them out the night before and simply reheat in a toaster oven or microwave.
- Looking for side dish ideas? For a kid-friendly breakfast plate, I’d serve 3–4 McGriddle Bites with strawberries and blueberries, scrambled eggs, and a little maple syrup for dipping. Easy, colorful, and filling without making breakfast complicated.
