Do you have picky kids at home? If you’re a busy mom trying to plan your dinner menu for the week, add this simple yet impressive dinner to your rotation. You really can’t go wrong with a cream cheese ranch mixture spread over chicken and served with crispy bacon! To complete the meal, simply serve with a side of avocado, broccoli, salad, or any other veggie your kids are willing to eat without a fight.

Ingredients Needed

  • 4 large chicken breasts
  • 8 ounces softened cream cheese
  • ⅓ cup mayonnaise 
  • 2 cups shredded cheddar cheese
  • 2 tbsp ranch seasoning mix
  • cooked bacon for topping

The hardest part of this recipe is preparing the bacon unless you happen to have leftovers. Other than that, you’re seriously just combining cream cheese, mayo, bacon, cheese, and ranch seasoning in a bowl. 

Once you’ve got your delicious mixture ready, simply spread it over your chicken breasts in a large 9×13 baking dish. Top with more cheese, YES, more cheese! And then bake at 350° F for approximately 40 minutes, or until the chicken is done. 

Once you pull it out of the oven, place your remaining crispy bacon over top along with your favorite garnishes! You could try green onion, avocado, parsley, or anything else you’d like. And your side dish options are endless! Try this yummy chicken over rice, pasta, or potatoes for a quick and delicious family meal.

Ingredients

  • 4 chicken breasts 1½-2 pounds
  • 8 oz softened cream cheese
  • cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 2 tbsp ranch seasoning mix
  • 8 pieces cooked & crumbled bacon
  • garlic powder & black pepper to taste (optional)

Instructions

  • If you don't already have your bacon cooked, go ahead and cook that with your preferred method and set aside.
  • Preheat oven to 350°F and grease a 9x13 baking dish.
  • In a medium size bowl, combine the cream cheese, mayo, ranch seasoning mix, 1½ cups of cheddar (reserving ½ cup for later), and HALF of your crumbled bacon. You can also include any other additional spices to the mix that you'd like such as garlic powder or black pepper.
  • Evenly spread the mixture over your chicken breasts in your prepared pan.
  • Sprinkle the remaining cheese over top and bake, uncovered, until your chicken reaches 165°F and is no longer pink. If you have large, thick breasts that need longer to bake, I'd consider covering or tenting your dish with foil for part of the cooking time.
  • Allow the chicken to cool for a few minutes and then top with your remaining bacon. Enjoy with rice, pasta, or mashed potatoes!

Notes

For added nutrition, I like to serve this creamy chicken with avocado, salad, or a side of veggies such as broccoli or green beans. Anything green!
