Ingredients Needed

  • 1 pound breakfast sausage 
  • 2 cups dry pancake mix (like Hungry Jack)
  • 1 ½ cups water
  • 1 cup shredded cheddar cheese
  • ¼ cup maple syrup (plus more for dipping)

Step 1This yummy comfort food breakfast couldn’t be easier to make! Simply brown the sausage and drain or blot off any excess grease. We like the Jimmy Dean regular sausage, but you could also try the spicy or sage flavored. 

Step 2In a large bowl, combine the pancake mix, water, and maple syrup. Don’t over mix! Fold in the cooked sausage and cheddar cheese to the batter. Cooked ground sausage, shredded cheddar cheese, and pancake mix in a bowl ready to be mixed.

Ingredients

  • 1 pound breakfast sausage
  • 2 cups dry pancake mix
  • cups water
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 400° F and grease or line a mini muffin pan.
  • Brown and chop the sausage until no longer pink. Remove from the pan and place on a paper towel lined plate to soak up some of the grease.
  • In a large bowl, combine the pancake mix, water, and maple syrup. Do NOT over mix! It's ok if the batter is a little clumpy.
  • Fold in the cooked sausage and cheddar cheese.
  • Spoon the batter into your prepared pan and bake for 12-15 minutes, or until muffins are golden brown and a toothpick comes out clean.
  • Enjoy with more maple syrup for dipping!

Notes

  • Store any leftovers in the fridge for up to 5 days. Reheat in the microwave for just a few seconds and they are just as good as the day you baked them!
  • Freeze for later. Once fully cooled, store them in a freezer bag for up to 3 months. When ready to eat, thaw them out the night before and simply reheat in a toaster oven or microwave.
